Caramel-roasted Apricots With Vanilla Ice Cream

A refreshing apricot and ice cream dessert .

Ingredients:

  • 10 apricots, halved
  • 225g/8oz caster sugar
  • 1 orange, juice only
  • 25g/1oz butter
  • 25g/1oz Marcona almonds, roughly chopped
  • 25g/1oz hazelnuts, roughly chopped
  • 25g/1oz pistachio nuts, roughly chopped
  • 200g/7oz raspberries
  • 500ml/18fl oz vanilla ice cream
Beat the summer heat with a mouth-watering ice cream for dessert!
